Pumpkin Ricotta Gnocchi

Pumpkin ravioli with brown butter and sage is a classic for a reason: The color, the texture and the flavors of winter squash, fried sage and browned butter are a match made in heaven. But making ravioli requires a fair bit of skill. Gnocchi, however, are easy to make once you get the hang of it.

The key to making any dumplings is to make them as light as possible. We've all had leaden lumps of unhappiness before; they're memorable, and not in a good way. What keeps these gnocchi fluffy are the ricotta cheese and a light hand with the flour. Gnocchi dough is often sticky, and it's the ability to resist the urge to keep adding more and more flour that separates a good dumpling from a heavy one.

Smoked Salmon Pasta Salad

One of the challenges of the holidays is keeping everyone fed when the family comes to town. We're always looking for dishes that can feed lots of people well, without a lot of hassle, and that are relatively easy to store. Better yet if it can use up holiday feasting leftovers. Here is a simple smoked salmon pasta salad that used up the last of some smoked salmon we had for a gathering. I take no credit for the idea; I shamelessly reproduced the recipe from a lovely pasta salad I had at my friend Peg Poswall's house the other day. It must be my dad's midwestern roots taking hold in me. Of all the beautiful dishes at the table, including roast goose and prime rib, the one I kept going back to for seconds was this pasta dish brought by Peg's friend Jackie. So simple, but so good. The little bits of smoked salmon do pretty much all the heavy lifting as far as flavor goes. There's just enough mayo so the salmon sticks to the pasta. And the celery and bell pepper provide color, coolness, and crunch.

Quick Macaroni and Cheese

I don't know about you, but I could really use some comfort food right now. Updated, from the recipe archive. Originally posted a gazillion years ago. ~Elise

A few months ago I prepared macaroni and cheese this way for some young friends in a sly attempt to broaden their Mac-Cheese horizons away from Kraft. At first the girls were tentative, but as there was no other lunch apparently forthcoming, they each tried a nibble on one piece of cheese-covered elbow macaroni. Aldie, who can take 30 minutes to eat a slice of apple, wolfed hers down in 2 minutes flat and asked for seconds. The other girls devoured theirs as well.

Spaghetti with Quick Meat Sauce Recipe
Instead of opening a jar of sauce, try this easy spaghetti with meat sauce on a weeknight. Serve with steamed broccoli and garlic bread. The recipe makes enough for 8 servings. If you’re serving only four for dinner, cook 8 ounces of spaghetti and freeze the leftover sauce.
 
Lemon-Garlic Sardine Fettuccine Recipe
Even sardine skeptics will enjoy this lemony pasta with crispy breadcrumbs. Substitute two 5- to 6-ounce cans chunk light tuna for the sardines if you prefer. If you are using tuna or can’t find sardines packed in tomato sauce, add 2 tablespoons tomato paste in Step 4 with the lemon juice. Serve with a salad of bitter greens tossed with a lemon vinaigrette and a glass of Pinot Grigio.
 
Creamy Cajun Chicken Pasta Recipe
This zesty Cajun-style pasta is full of lean chicken, peppers and onions. Serve with sautéed green beans.
 
Mediterranean Couscous Cabbage Rolls Recipe
We love the subtle flavor of cinnamon with fresh mint in these vegetarian cabbage rolls stuffed with couscous, olives and feta cheese. Don’t worry if your cabbage leaves tear a little when you pull them off the head; they will wrap up just fine. As a precaution you can cook a couple extra leaves and roll two partly overlapping if needed. Serve with roasted butternut squash tossed with olive oil, cinnamon and garlic. To double this recipe, use 2 large skillets and prepare one 4-serving recipe in each.
 
Braised Winter Vegetable Pasta Recipe
In this vegetable-studded vegan dish we braise cauliflower, butternut squash and pasta in white wine and broth in an unconventional technique that yields delicious results. Serve with a spinach salad with red onion, orange segments and a light vinaigrette.
